CCISD Culinary Arts Students Present Monthly Dinner Series Open to the Community

To the delight of the general public, Clear Creek ISD Culinary Arts students have swung open the doors to Clear Springs High School and Bistro Urbano to host a series of themed dinners throughout the year. The critics have spoken and the dinners are a hit. Better yet, there are more to come.

Bistro Urbano is the District’s Culinary Arts Program “laboratory” where students from all of CCISD’s high schools may explore their interests in this field in a real-world restaurant environment.

The monthly dinner series is a sort of show (taste) and tell for students whereby each dinner is a unique take on a region’s cuisine or specialty foods. The October dinner featured Floribbean selections while November was a completely plant-based menu.

“There were seven courses of delicious, beautifully presented, plant-based dishes,” said dinner guest Teresa Ritter. “Being a vegetarian myself, I was happy to experience many more options than what I ever prepare at home or have even enjoyed in a restaurant setting. It was obvious that Chef Roussel and his students enjoy what they do, and they take pride in what they produce.”

From the baseline culinary arts class through the practicum courses, students enrolled in the Culinary Arts program gain insight into the operation of a well-run restaurant including management, planning, staffing, menu creation and food preparation. The courses culminate in the opportunity for students to take the ServSafe Certification Exam. The Practicum in Culinary Arts course provides students with internship experiences and opportunities to compete on the local, national and even international competition stage.

The third themed dinner at Bistro Urbano is planned for December 12, 2019, at 6 p.m. “Holiday Traditions Tour of America” will feature a six-course meal kicking off with the amuse bouche of melon confit and house made honey ham from the mid-Atlantic. After an appetizer of chicken and green chili tamales from the West/Southwest region, guests will taste a Cioppino “Fisherman’s Stew” from the Pacific Northwest.

“We are excited and honored for the opportunity to share with our community the hard work of our students through their culinary creations,” said Chef Tate Roussel, CCISD Culinary Arts Director.

The cost is $40 to experience the multi-course meal. Childcare for children over the age of two is provided at no cost.
